(For an 800ml loaf pan)
Ingredients:
- 2 ripe bananas
- ½ cup (90g) light brown sugar (or a mix of half light and half dark sugar)
- 1 egg
- 1 tsp vanilla extract
- 1 tbsp milk
- 5 tbsp (⅓ cup or 75 ml) vegetable oil (use a neutral oil like sunflower or rice bran oil)
- 1 cup (140g) all-purpose flour (wheat flour can also be used)
- ½ tsp (2g) baking soda or 1 tsp baking powder
- ⅛ tsp (0.25g) cinnamon powder
- ¼ cup (30g) chopped walnuts or almonds
- A pinch of salt
Instructions:
- Preheat the oven to 180°C (356°F). Grease and line an 800ml loaf pan.
- In a bowl, mash the bananas with the brown sugar using a fork for about 2 minutes until smooth.
- Add the egg to the banana mixture and stir until well combined.
- Stir in the vanilla extract, milk, and vegetable oil until fully incorporated.
- In a separate bowl, whisk together the flour, salt, baking soda (or baking powder), and cinnamon powder.
6. Reserve a few chopped walnuts (or almonds) for sprinkling on top of the batter.
7. Gently fold the dry ingredients into the wet mixture, being careful not to overmix. Stir in the remaining chopped walnuts or almonds.
8. Pour the batter into the prepared loaf pan and sprinkle the reserved walnuts (or almonds) on top.
9. Bake at 180°C (356°F) for about 40 minutes, or until a wooden pick inserted into the center comes out clean. Baking time may vary depending on your oven.
10. Once baked, remove the loaf from the pan and allow it to cool completely on a wire rack.
11. Slice and enjoy the moist and flavorful banana bread, either plain or with your favorite toppings!
